     Spoon Bread

Ingredients
2 cups cornmeal
2 teaspoons double acting baking powder
1 1/2 teaspoons salt
1/2 teaspoon baking soda
water
2 cups milk
2 eggs
 

Instructions
Preheat oven to 350 degrees. Grease 2 quart casserole. In medium bowl, mix first 4 ingredients with 1 cup water. In 3 quart saucepan over high heat, heat 1 cup water to boiling; reduce heat to low; stir in cornmeal mixture; cook, stirring constantly until very thick; remove from heat. With hand beater or wooden spoon, gradually beat milk, then eggs, into cornmeal mixture until smooth. Pour into casserole. Bake 1 hour or until set.
