     Confetti Potatoes

Ingredients
1/2 cup chopped zucchini
1/2 cup celery slices
1 Tablespoon margarine
1 cup mushroom slices
1/2 pound Velveeta, cubed
4 hot baked potatoes, cut in half lengthwise
1/4 cup chopped red or green peppers
 

Instructions
Saute zucchini and celery in margarine 2 minutes or until crisp tender. Add mushrooms; cook 1 minute. Add Velveeta, stirring over low heat until Velveeta is melted. Serve over potatoes. Top with peppers.
