     Fish Boil

Ingredients
water
salt, to taste (if desired)
3 Tablespoons Italian seasoning
2 teaspoons onion flakes
2 teaspoons dill weed
1/2 teaspoon black pepper
1/4 teaspoon garlic flakes
1 to 2 scraped and cut up carrots per person
1 to 2 scrubbed, unpeeled and quartered medium white potatoes (not bakers) per person
 
2 small white onions per person
1/2 pound skinless, boneless frozen fish fillets per person, partially thawed
melted butter, salted or unsalted
parsley

Instructions
Cook fish boil indoors on stove or outdoors over grill or wood fire. Using a 4 quart or larger size kettle with lid and basket (such as a spaghetti cooker), add water to fill 2/3 full (make sure water won't overflow when basket is lowered into kettle). Heat water to boiling; add salt (if desired), Italian seasoning, onion flakes, dill weed, black pepper, and garlic flakes. Place carrots, potatoes and onions in basket. Lower basket into boiling water. Bring water back to boiling; boil vegetables for 30 minutes. lift basket; add fish and return basket to water. Bring to a boil again; boil about 10 minutes (cooking time depends on thickness of fish). Remove basket from water; drain. Place fish and vegetables in serving bowl. Drizzle with butter and sprinkle with parsley; serve hot. Recipe can be expanded to capacity of kettle and basket used. Great for feeding a crowd.
