     Chicken and Wild Rice Soup

Ingredients
2 (14.5 oz.) cans chicken broth
1 c sliced carrots
1/2 c sliced celery
1/3 c wild rice, uncooked
1/3 c sliced leek or green onion
1/2 tsp dried thyme, crushed
2 Tbsp butter
3 Tbsp all-purpose plour
1 c half and half or milk
 
1 1/2 c chopped cooked chicken
2 Tbsp dry sherry

Instructions
1. Mix broth, carrots, celery, uncooked rice, leek or green onion, dried thyme and 1/4 tsp pepper in a saucepan. Bring to boiling; reduce heat. Cover and simmer 50 min or until rice is tender. 2. Meanwhile, melt butter; stir in flour. Stir in half and half or milk. Cook and stir until bubbly. Cook and stir 1 min more. Slowly add half and half mixture to rice mixture, stirring constantly. Stir in chicken and sherry; heat throughly.
