     Chicago Deep Dish Pizza

1 1 pound loaf frozen white bread dough, thawed
1 pound italian sausage
1/4 cup chopped onion
1 16 ounce can tomatoes
1 6 ounce can tomato paste
1/3 cup grated Parmesan cheese
1 teaspoon dried oregano leaves, crushed
1 teaspoon dried basil leaves, crushed
2 6 ounce packages mozzarella cheese slices

On lightly floured surface, let dough stand at room temperature for 1 hour. Remove casing from sausage. brown sausage; drain. Add onions; cook until tender. Stir in tomatoes, tomato paste, Parmesan cheese and seasonings; simmer for 15 minutes. Roll dough to 15 x 11 inch rectangle; press onto bottom and 1 inch up sides of greased 13 x 9 inch baking pan. Cover with half of mozzarella cheese and tomato mixture; repeat layers. Bake at 425 degrees for 20 minutes. Sprinkle with additional Parmesan cheese, if desired. let stand 15 minutes before serving.
Variations- Add 1 cup mushroom slices and 1/2 cup chopped green peppers with onions. Substitute 1 pound ground beef for Italian sausage. Add 1 teaspoon fennel seed to meat mixture.
