     Christmas Cake

Ingredients
2 1/2 cups self-rising flour
1 cup buttermilk
1 1/2 cups vegetable oil
1 teaspoon baking soda
1 teaspoon vanilla
1/4 cup (2 large bottles) red food coloring
1 1/2 cups granulated sugar
1 teaspoon cocoa powder
1 teaspoon white vinegar
 
2 large eggs
FROSTING-
1 1/3 sticks butter softened
10 ounces cream cheese
1 pound box confectioners sugar
2 cups chopped pecans

Instructions
To make cake- Heat oven to 350 degrees F. Mix together all ingredients with electric mixer. Coat 3 9-inch round cake pans with cooking spray. Equally divide batter into 3 pans. Bake 20 minutes. Test for doneness with toothpick. Cool layers in pans on wire racks for 10 minutes. Carefully remove from pans and place cakes on racks to cool completely.
For frosting- Combine all ingredients except pecans in a bowl and beat until fluffy. Fold in 1 1/2 cups pecans. Frost cake layers and decorate top with remaining 1/2 cup of pecans. Refrigerate at least 1 hour before serving.
