     Chicken - Panko Breaded

7 Cups Panko breading or crushed Corn Flakes
1 egg
1 cup milk
1 cup flour
1/2 tsp. salt
1/4 tsp. pepper
3 lbs chicken pieces, with or without skin, rinsed and dried
3 Tbl. butter, melted

Place crushed corn flakes or panko breading in a shallow dish and set aside.
In medium mixing bowl, beat egg and milk slightly. Add flour, salt and pepper. Mix until smooth. Dip chicken in batter. Coat with breading. Place in a single layer in a shallow baking dish coated with cooking spray or foil lined. Drizzle with melted butter.
Bake at 350 deg. about 1 hour or until chicken is tender, no longer pink and juices run clear. Internal temperature should reach 165 deg.
Do not cover pan or turn chicken while baking.
