1/4 cup chopped scallions (white and light green parts)
2 Tbs. whole grain mustard
1 Tbs. plus 1 tsp. apple cider vinegar
salt and freshly ground black pepper
4, 91/2 inch jumbo whole wheat honey tortillas
1 cup loosely packed baby spinach leaves
Instructions
In a large bowl, combine the chicken, pimientos, celery, mayonnaise, scallions, mustard viegar, salt and pepper. Mix to combine well with the sauce.
Spoon 1/4 of the mixture into each tortilla, leaving a 1/2 inch border the edges, and top with 1/4 cup of spinach leaves. Fold in one side of the wrap and roll up. Serve chilled.
