     Turkey and Pepper Jack Sammys With Avacado Salsa

Ingredients
1 ripe avacado, halved, peeled, pitted and diced
2 Tbs. mayonnaise
1 Tbs. chopped fresh cilantro
2 tsp. finely chopped red onion
2 tsp. freshly squeezed lime juice
1/2 jalepeno pepper, seeded and finely chopped
1/4 tsp. salt
8 slices whole grain bread
1/4 lb. sliced deli smoked turkey breast
 
4 oz. pepper jack cheese, thinly sliced
Olive oil, for brushing

Instructions
In a medium bowl, mash together the avacado, mayonnaise, cilantro, onion, lime juice, jalapeno, and salt til almost smooth, but still slightly chunky.
Spread one side of each bread slice with the avacado salsa. Top each of the 4 slices withthe turkey and cheese, cover with the remaining bread slices.
Heat a large skillet over medium heat. Brush the tops and bottoms of sandwiches with olive oil. Toast until bread is crisp and golden and cheese is melted. (about 2 min per side.) Serve hot or at room temperature.
