     ROASTED TOMATOS WITH PASTA

2 PINTS GRAPE TOMATOES
2 CLOVES GARLIC, GRATED
DRIZZLE OF OLIVE OIL
20 LEAVES FRESH BASIL, ROUGHLY CHOPPED
1 CUP GRATED CHEESE
FRESH GROUND BLACK PEPPER/SALT
PASTA/ 1/2 CUP PASTA WATER
425 DEGREES
 
8-10 MINUTES

Instructions
COOK PASTA PLACE GRAPE TOMATOES ON A COOKIE SHEET, GRATE GARLIC OVER THEM. DRIZZLE THEM WITH OIL, SEASON WITH SALT & PEPPER AND ROAST FOR 8-10 MINUTES IN A 425 DEGREE OVEN TILL TOMATOES START TO BURST. TRANSFER ROASTED TOMATOES TO A LARGE BOWL. ADD THE RESERVED PASTA WATER AND WITH A POTATO MASHER, LIGHTLY SMASH THE TOMATOES, ADD BASIL, DRAINED PASTA, AND CHEESE AND TOSS TO COAT. TASTE FOR SEASONING WITH SALT & PEPPER.
