     Buttery Yeast Rolls

Ingredients
2 pkg dry yeast
1/2 cup warm water, 100 to 105 degrees F.
1/4 cup sugar
1 cup milk, room temperature
2 large eggs, room temperature
16 tblsp melted butter, divided
2 tsp salt
6 cups all-purpose flour, plus extra for rolling
 

Instructions
In a mixing bowl, combine the yeast, warm water and sugar; set the bowl aside for about 5 minutes to allow the yeast to develop. In amixing bowl, whisk together milk, eggs and 8 tablespons melted butter; add the yeast mixture and whisk to combine. Place this mixture in hte bowl of an electric mixer, add salt and 4 cups of flour and mix on medium-low speed until the flour is incorporated. Add 1 cup flour and continue to mix. Scrape the inside surface of the mixing bowl and add hte remaining flour. Increase the speed to medium and mix the dough for 7-8 minutes. Transfer the dough to a large buttered bowl. Cover with a clean cotton towel and let dough rise for 1 hour or until it has doubled in size. Line 2 baking sheets with parchment paper. Lghtly flour a work surface and transfer the dough. Cut the dough in half, dust one piece lightly with flour and roll it into a rectangle measuring 8x16 inches. Butter the surface of the dough with some of the remaining butter.
The dough might shrink a bit after it has been rolled; allow it to rest for a few minutes before cutting. Cut the dough into pieces measuring about 2x3 inches. Transfer the rolls to prepared pans. Repeat the process with the second piece of dough. Preheat the oven to 375 degrees. Allow rolls to rise for about 20-30 minutes. Bake rolls 17-20 minutes or unil golden brown. Brush baked rolls again with remaining melted butter. Cool slightly and serve. Makes about 30 rolls.
