     Glazed Barbecue Shrimp

Ingredients
1 1/2 lbs. jumbo shrimp, peeled and deveined
1/2 tsp. salt
3/4 tsp. freshly ground black pepper
2/3 homemade barbecue sauce or prepared barbecue sauce
1/3 cup apricot jam
2 tsp. apple cider vinegar
1/4 tsp. crushed red pepper flakes
6 metal skewers
 

Instructions
Rinse the shrimp and pat dry with paper towels. Season all over with salt and pepper. In a small bowl, whisk together the barbecue sauce, jam, vinegar, and red pepper flakes. Toss 2/3 of the sauce with the shrimp; reserve the remaining 1/3 for basting.
thread the shrimp through shrimp through the head end and tail end and onto the skewers.
Preheat the grill to medium-high heat and brush the grate with oil or spray with nonstick cooking spray.
Transfer the skewers to the grill. Close the cover and cook for 1 min. per side or until the shrimp are opaque and well glazed. Serve hot.
