     Fresh Asparagus Salad

Ingredients
2 pounds fesh asparagus spears
8 cups water
1 teaspoon salt
VINAIGRETTE-
1/4 cup coarsely chipped shallots
2 T stone ground mustard
4 teaspoons raspberry vinegar
2 teaspoons white wine vinegar
 
1/8 teaspoon salt
1/8 teaspoon ground white pepper
1/4 cup extra virgin olive oil
1 T snipped fresh dill sprigs of fresh dill

Instructions
Wash and drain asparagus.Snap off weedy base...discard. Fill large bowl with ice water and set aside. In large saucepan,bring 8 cups water and 1t salt to boil. Add asparagus to boiling water. Cook 2 or 3 minutes to crips-tendar.Drain, immediately pluge spears into ice water. Drain well and pat dry. Set aside.
Vinaigrette- In small bowl Whisk together shallots mustard raspberry vinegar white wine vinegar salt and pepper.continue whisking while slowly adding olive oil an thi steady stream. Gently whisk in snipped dill. pour ove spears spreading evenly to coat spears. Cover, let stand at room temperature ato least 1 hour before serving. Arrange apparagus on platter. spoon vinaigrette over spears. Garnish with sprigs of dill Serves 6---double for 12
