     Warm-Me-Up White Chili Soup

Ingredients
2 Tbsp vegetable oil
1 cup chopped onion
1 green pepper, chopped
1 yellow pepper, chopped
2 tsp chili powder
3 cups cooked chicken, shredded
10 oz can enchilada sauce
16 oz bottle of your favorite salsa, regular or roasted
15 oz white kidney beans, drain and rinse
 
15 1/2 oz canned hominy, drained and rinsed
4 cups chicken stock
salt to taste

Instructions
Heat the oil in a large pot over medium heat; add onions and peppers and cook 3-5 minutes or until the vegetables are tender. Add chili powder, cook another minute. Add the remaining ingredients, stir well and allow the soup to come to a gentle boil, then simmer 20 minutes. Serve in Woven Traditions Chili Bowls with grated white cheddar, crushed tortilla chips, chopped avocado, chopped scallions, fresh lime wedges or sour cream. Put it into the Bright Multi-Color 2-Quart Pitcher and serve this buffet style! - - - - - - - - - - - - - - -NOTES - This chickeny chili will warm you inside and out.
