     Rhubarb Crunch

Ingredients
1 cup flour
3/4 cup oatmeal
3/4 cup brown sugar
1/2 cup butter
1 tsp cinnamon
4 cups diced rhubarb
1 cup sugar
1 cup water
2 Tbsp cornstarch
 
1 tsp vanilla

Instructions
Mix flour, oatmeal, brown sugar, butter, and cinnamon until crumbly. Press half of the mixture into a 9 inch square pan. Cover with diced rhubarb. Cook sugar, water, cornstarch, and vanilla in saucepan until clear and thick. Pour mixture over rhubarb. Top with remaining crumbs. Bake at 350 degrees for 35 minutes.
Serving Suggestions
Serve warm with vanilla ice cream.
