Heat oven to 300°. Cook the bacon in a ditch oven until nearly crisp. Add onion, 1 tsp salt and ½ tsp pepper. Cook 4-6 min. until onion is soft. Add beans, molasses, ketchup, mustard, and 5 c water and bring to a boil. Cover and transfer to oven. Bake until liquid is reduced by half, about 2½ hours. Uncover and bake stirring once, until the liquid has thickened, 1-1¼ hours. Stir in vinegar and serve.
