     Chocolate Chip Carrot Cake

1 teaspoon cinnamon
1 1/2 cups flour
3/4 cup sugar
1/2 cup packed light brown sugar
1 1/4 teaspoons baking soda
1/2 teaspoon salt
3 eggs
3/4 cup vegetable oil
1 1/2 teaspoons vanilla
2 cups grated carrots
2 cups (12 ounces) semi sweet chocolate mini chips
1/2 cup chopped walnuts
cream cheese frosting (recipe below)

Combine flour, sugar, brown sugar, baking soda, cinnamon and salt in large mixer bowl. beat eggs, oil and vanilla in small mixer bowl; add to dry ingredients. Blend well. stir in carrots, mini chips and walnuts. Pour into greased and floured 13 x 9 inch pan. Bake at 350 degrees for 35 to 40 minutes or until cake tester comes out clean. Cool completely; frost with cream cheese frosting.
Cream Cheese Frosting- Beat 1 package (3 ounces) cream cheese, softened, and 1/4 cup softened butter or margarine in small mixer bowl until smooth and well blended. Gradually add 2 cups confectioners sugar; stir in 1 teaspoon vanilla. Beat until smooth.
