Prepare streusel topping; set aside. Combine baking mix, sugar, coffee granules, milk and egg in large mixing bowl; beat vigorously for 30 seconds. Spread half the batter in greased 8 inch round pan; sprinkle with half the mini chips and half the streusel topping. Cover with remaining batter; repeat layers of mini chips and topping. bake at 400 degrees for 25 to 30 minutes or until cake tester comes out clean. Serve warm.

Streusel Topping- Using fork or pastry blender, combine 1/3 cup buttermilk baking mix, 1/3 cup packed light brown sugar, 1/2 teaspoon cinnamon and 2 Tablespoons softened butter or margarine in small mixing bowl until crumbly.
