     Buttermilk-Soaked Oven-Fried Chicken

Ingredients
2 1/2-3 pounds chicken
1/2 cup buttermilk
2 eggs
1 tablespoon dijon mustard
1 tablespoon honey mustard
1/4 teaspoon red pepper
1/4 teaspoon ground black pepper
2 teaspoons grated orange zest
2 cups crushed corn flakes
 

Instructions
In large bowl whisk buttermilk, eggs, mustards, salt, peppers and zest.
Soak chicken in mixture for 10 minutes. Coat corn flakes onto chicken.
Put chicken on baking sheet greased with pam. Refrigerate overnight or at least 5 hours.
Bake chicken for 35 minutes at 400.
