     Venetian Eggs

Ingredients
1/2 lb salt pork, diced
3 med onions, diced
2 (1 lb 13 oz) cans tomatoes
1 1/2 cups bread or cracker crumbs
1 1/2 lb American cheese
salt and pepper
5 eggs
toast or crackers
 

Instructions
Fry salt pork and onions. Add the tomatoes adn crumbs to fried onion and seasoning. Cook until thick. Break cheese into small pieces and stir it in quickly so taht it melts but does not become stringy. Break eggs into the mixture after removing it from the fire. Stir briskly and serve on toast or crackers.
