     Italian Sausage/ Cheese Tortellini Soup

Ingredients
.5 Cup - 2 tsp Hot water
.1 oz. Beef Base
.48 oz. Cabbage
.16 oz. Diced onions
.01 oz Diced Tomatoes
.64 oz. Pork sausage Italian chunks
1/4 tsp Basil
Dash of salt
Dash of Black Pepper
 
.64 oz. Fresh thin sliced Zucchini
.8 Plain Cheese Tortellini
2 tbsp - .5 tsp Cold water

Instructions
Combine hot water and beef base in steam jacketed kettle. Clean cabbage and onion. Finely shred cabbage, chop onion into 1/4 inch pieces. Add cabbage, onions, tomatoes, crumbled sausage and seasonings. Bring soup to a boil, then reduce to simmer approximately 1 hour.
Slice zucchini quarter moon, thin slices. just before serving, add tortellini and zucchini to soup & cook soup until zucchini is tender.
