     Cheesy Corn Fritters

Ingredients
1 egg
scant 1 cup milk
3/4 cup all-purpose flour
1/2 tsp baking powder
3 oz canned corn kernals without salt or sugar
4 tbsp grated cheddar cheese
1 tsp snipped fresh chives
2 tsp sunflower oil for frying
extra corn and mini carrot sticks, to serve
 

Instructions
put egg and milk into small bowl and beat with a fork add flour and baking powder and beat until smooth stir in corn, cheese, and chives heat a little sunflower oil in a skillet and drop batter into oil (teaspoonful or tablespoon size) cook for 1-2 min on each side until golden and puffed drain on paper towels and serve
