     Moist Banana Bread

Ingredients
1 1/2 C. flour
1 tsp salt
1 tsp. baking soda
1 C. mashed ripe bananas - about 3
1 C. sugar
1 egg
1/4 C. butter, melted and cooled
 

Instructions
In a bowl, stir together flour, salt, and soda - set aside.
In another bowl combine sugar bananas, stir well. Then add egg and butter and stir to blend.
Pour liquid ingredients into dry ingredients and mix just until moistened. Pour batter into a greased 81/2 by 41/2 inch loaf pan.
Bake 325 degrees for 55 to 60 minutes or until bread begins to pull away from sides of pan. Let cool in pan for 10 minutes, then turn out onto a rack to cool before slicing.
Serving Suggestions
wrapped in refrigerator for 1 week or Freeze
