     Jambalaya

Ingredients
1 pound Cajun style sausage
4 skinned and boned chicken breast halves
1 1/2 teaspoon black pepper
2 Tablespoons peanut or vegetable oil
1 large onion, finely chopped
1 medium sized green pepper, chopped
1/2 cup chopped celery
3 cloves garlic, minced
1 cup chopped cooked ham
 
2 teaspoons cajun seasoning
1 (14 1/2 ounce) can stewed tomatoes, undrained
1/2 cup chicken broth
1/4 teaspoon dried thyme
1/4 teaspoon ground red pepper
3 cups hot cooked rice
1 cup finely chopped green onions (1 bunch)

Instructions
Cut sausage into 1/2 inch slices, and chop chicken into small pieces. Sprinkle chicken with pepper. Cook, chicken in oil, in a large dutch oven over medium high heat 4 minutes or until browned, stirring often. Remove and set aside. Add sausage, and cook, stirring constantly, 4 minutes or until browned. Remove sauce; set aside. Add onion and next 3 ingredients to dutch oven; cook, uncovered, 5 to 7 minutes or until vegetables are crisp tender. Stir in chicken, sausage, ham, Cajun seasoning, and remaining ingredients; cook 7 minutes or until thoroughly heated, stirring occasionally.
