Mousse: In a food processor, puree the cream cheese and goat cheese until very smooth. Transfer to a medium-sized mixing bowl. Season with salt. Fold in whipped cream. Garnish with chopped chives.
Twists: Brush puff pastry sheet with egg wash. Sprinkle spice mix of your choice evenly over the sheet. Cut the pastry into ½ inch wide strips.
Holding one end of the strip to your work surface, use the other hand to roll the pastry away from you, twisting the strip into a ribbon. Transfer the twists to a parchment-lined baking sheet.
Bake at 350° for 12 minutes until golden. For a colorful presentation, use a different sprinkling mix for each sheet of puff pastry.
