     Boiled Crawfish

Ingredients
35-40 pounds of live crawfish
26 ounces salt, for purging (optional)
water
2 pounds Louisiana Crawfish Boil Mix
6-8 lemons, sliced in half
smoked sausage, cut into large pieces
mushrooms
small new red potatoes, unpeeled
15-20 ears of corn
 
6 heads of garlic, cut in half
5 pounds onions
1 grapefruit

Instructions
in a large pot (60-80 gallon), over high heat, add enough water to fill a little more than halfway. squeeze the juice out of the lemon halves and into the water, then throw the lemon halves in the water. Add the crawfish boil seasoning. Cover the pot and turn on the burner full blast, and bring to a boil, boil 2-3 minutes. Using a large wire basket that fits into the pot, add corn, garlic, onions, sausage, mushrooms and potatoes. Maintain a boil and cook for 10 minutes. Add crawfish and bring back to a boil. Boil 5 minutes. Turn burner off, keeping pot covered, and let soak for 20 minutes. Remove basket, drain crawfish, and serve.
