     Chile Colorado Burritos

Ingredients
1 1/2 to 2 lbs stew meat or other beef cubed (i.e. top sirloin); cubed
1 large can (19 oz) enchilada sauce (mild)
2 beef buillon cubes
1/2 can refried beans
5-7 burrito size flour tortillas
1 cup (or so) shredded cheddar cheese
 

Instructions
Cook beef, buillon cubes and enchilada sauce in crock pot on low, 7-8 hours
Heat up refried beans and put oven on broil
On cookie sheet, lay out tortilla. Place 1/2 cup meat(drained w/slotted spoon), spoonful or two of refried beans, roll. Pour some of remaining enchilada sauce from crock pot over top, sprinkle w/cheese. Broil until cheese is bubbly (about 2-4 minutes)
(Can also make this with chicken, can boil in enchilada sauce on the stove.)
