     Santa Fe Corn Chowder

Ingredients
1/2 c chopped onions
2 tbsp butter
3 tbsp all purpose flour
3/4 tsp cumin seed
1/2 tsp garlic salt
1/2 tsp ground coriander
4 c skim milk
16 oz frozen cut corn
4 oz diced red and green peppers
 
6 oz shredded sharp cheddar cheese
2 tbsp cilantro
15 oz black beans

Instructions
Cook onion in margarine in Dutch oven over medium heat about 5 min., stirring occasionally, until onion is crisp tender. Mix flour, cumin, garlic salt, and coriander in medium bowl. Gradually stir in milk. Pour into Dutch over. Stir in corn and beans. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir in 1 c of cheese until melted. Top each serving with remaining cheese and cilantro.
