     Rhubarb Crumble

Ingredients
1 c brown sugar
1 c flour
3/4 c quick cooking oatmeal
1/2 c melted butter
1 tsp cinnamon
4 c diced rhubarb
2 tbsp cornstarch
1 c water
1 tsp vanilla
 
1 c sugar

Instructions
Preheat oven to 350. Mix the dry ingredients until crumbly and press half into a 9x9 in pan. Cover with 4 c diced rhubarb. In a saucepan, mix final four ingredients and cook over medium heat until thick and clear. Pour mixture over rhubarb and top by sprinkling with remaining crumbly mixture. Bake at 350 for one hour.
