     Mexi Chicken Casserole

Ingredients
1 can Fat Free Cream of Chicken Soup
1 can Fat Free Cream of Celery Soup
3 cups shredded cooked chicken
6 Laughing Cow BabyBel Light cheese rounds
2 cans chopped green chiles, drained
optional- 1/2 cup Spicy Salsa Verde (tomatillos, jalapenos, lime)
 

Instructions
Grate the cheese and set aside. Mix ingredients together in a bowl. At this point the mixture can be stored in the refrigerator until you're ready to serve.
For On Plan serving- put 1 cup of mixture on a microwave-safe plate or bowl, top with grated cheese from 1 Babybel round. Microwave until bubbly and cheese melted.
For Others (not on-plan)- Put a handful of tortilla chips on a plate, in a bowl, or in a casserole dish. Pour 1 cup of mixture on top of the chips, sprinkle grated cheese on top and microwave until bubbly and cheese melted.
The original recipe this is based on, put the chips in a casserole dish, poured on the mixture, topped with grated cheddar and mozzarella cheeses then baked. If prepared in advance though, the chips get soggy.
Serving Suggestions
Note- Regular recipe (without optional green salsa) is very mild in flavor. Add Spicy Green Salsa to increase the spice heat.
