     cold cucumber and seaweed soup

Ingredients
2 cups kombu dashi chilled
1/3 cup soy sauce
2 tblspn honey
2 tblspn light or dark brown sugar
2 cukes peeled and seeded
2oz wakame seaweed, broken into bits and soaked in cold water until soft
1/4 cup sesame oil
2 scallions chopped
1 tblspn sesame seeds
 
japansese 7 spice mix or hot red pepper flakes to taste

Instructions
combine the dashi soy sauce honey and sugar in small mixing bowl. stir until the sugar dissolves. slice the cuckss lengthwise as thinly as possible...ideally like long thin noodles. if you have time toss the slices cukes with salt in a colander for 10-15 min then rinse and squeeze dry
divide the softened seaweed among 4 serving bowls. nestle the cukes into the seaweed. top each portion with a tblspn of sesame oil then scatter with the scallions sesame seeds and spice mix, pour the soup base over the cuke noodles at the table.
