     Nina's Chardonnay Clam Sauce

Ingredients
24 - little neck clams
2 cups - Chardonnay Wine
2 cups - Diced fresh tomato
1 cup - sectioned red onion
1 tsp - dried oregono
2 tblsp - butter
2 tbsp - capers
3 tbsp - olive oil
2 - cloves garic
 
Black pepper to taste

Instructions
Wash the clams thoroughly. Cut the tomatoes into cubes approximately half inch square. The red onion works best sectioned about one quarter inch wide. Chop the garlic cloves as small as practical.
Using a heated 8 quart sauce pot/steamer basket add the olive oil and onions to the bottom of the pan. Toss the onions until slightly translucent then add the garlic until slightly browned. Add the wine, butter, tomatoes capers and black pepper.
Place the clams in the steamer basket. If you do not have a steamer basket you can probably get the same result with a metal colander. Cover, bring the wine to a boil and steam until the clams open. Using a bowl containing your chosen pasta, ladle the liquid,onion and tomato mix over the pasta. Line the perimeter of the bowl with the clams. Enjoy!
