Preheat oven to 425-450 degrees. Scrub and dry the sweet potatoes. Cut the sweet potato in half. Then cut each half into 6-8 wedges. Coat the wedges with olive and spices. Coat a baking sheet with additional olive oil. Place wedges on the baking sheet and bake for 15 minutes. Flip wedges and bake an additional 15 minutes. Serve with curry mayo!
