Mix dry ingredients together thoroughly. Beat egg; add to dry ingredients along with extract. Stir in seltzer, a little at a time until absorbed. Let sit for 5-10 minutes. Heat over to 325. Spoon on greased cookie pan. Will make 12-18 biscuits; depending on size. Bake 8 minutes. Remove from pan and place biscuits on baking rack. Bake an additional 8 minutes.
