Heat one inch of oil to 350 in a deep skillet or use a deep fryer. Line a baking sheet with foil or parchment paper. Spray with cooking spray to prevent sticking.
Mix both cans of corn. Drop by spoonfuls onto lined baking sheet and freeze until firm, about 3 hrs.
Mix next five ingredients in a bowl. Dip the frozen corn nuggets into batter and imediately fry in the hot oil. Drain on paper towels.
