Peel and dice potatoes into cubes (I also cut up the potatoes just washed and unpeeled.) Put into large saucepan with your choice of meat. Cook on medium heat in water. Add flavorings. Cook til spuds are tender.

Lower heat and slowly add 2-3 cups of milk. Heat carefully on low (don't scorch) stirring regularly.

While milk and ingredients are heating, make noodles (kneedlin) by breaking 2 eggs into small deep bowl. Add approximately 1 cup of flour, 2 shakes of salt and pepper. With fork combine by lifting egg thru flour til noodle clumps.

As milk begins to boil, drop egg noodles (kneedlin) into milk. Allow mild to come to slow boil til noodles float. Remove from heat and add velveeta cheese (4-8 oz - to taste). Let cheese melt. Serve and enjoy.
