     Stuffed Potatoes Sutton Place

Ingredients
4 large size white baking potatoes
1/4 cup crumbled Feta cheese
1/4 cup nonfat or low fat milk
1/4 cup dry (French) vermouth
1 Tablespoon finely chopped fresh parsley
1/2 teaspoon salt
2 Tablespoons pickled chilies
1/2 teaspoon ground New Mexico red chilies
 

Instructions
Preheat oven to 400 degrees. Scrub the potatoes and bake for 45 minutes or until done. Remove the potatoes from the oven and cut each one lengthwise. Scoop out the pulp and mash with the rest of the ingredients, except the chili powder. Spoon the mixture back into the shells, sprinkle with the ground red chilies, and bake at 400 degrees for 20 to 30 minutes or until potatoes are warmed through.
