     Spinach & Cheese Stuffed Shells

Ingredients
1 large onion, chopped
3 cloves garlic, minced
6 tbs olive oil
1 large can tomatoes
1 large can tomato sauce
1 large can tomato paste
2 can water (tomato paste cans)
2 tsp basil
1 tsp oregano
 
1 tsp sugar
2 cups ricotta cheese
2 eggs
2 tbs parmesan
8 oz mozzarella, shredded
3/4 tsp salt, 1/4 tsp pepper
2 tbs parsley, 1/2 tsp oregano
10 oz. package frozen spinach (chopped and thawed and pressed dry)

Instructions
For sauce- Saute onion and garlic in olive oil. Add the remaining ingredients. Simmer for 1 1/2 hours.
Combine all filling ingredients, add spinach last and combine.
Boil water and cook shells. Place shells in casserole dish and fill with cheese/spinach filling. Pour sauce over filled shells and sprinkle with parmesan.
Cover and bake at 375 degrees for 30 minutes. Take off foil and bake 5 minutes.
