2 lbs skinless, boneless checken breats, cut into 1 1/2 inch chunks
1 C cornflakes
1/2 tsp salt
1/4 C Dijon mustard
1/2 C reduced calorie mayo
Instructions
Preheat oven to 400 degrees. Spray a large baking sheet with non-stick cooking spray.
In a large bowl, mix 1 tbsp of honey and the egg white. Add chicken and stir to coat. Transfer chicken to a colander and set over a large bowl.
On a sheet of wax paper, combine cornflake crumbs and salt. One at a time, dip chicken pieces into crumbs then place on baking sheet. Spray tops of chicken lightly with spray. Bake until cooked, about 8-10 minutes.
In small bowl mix mayo, mustard and remaining 2 tbsp honey. Serve nuggets with dipping sauce.
