     Sticky Date Pudding with Brown Sugar Sauce

Ingredients
250 g pitted dates
1 1/4 cups water
1 teaspoon baking soda
125 g unsalted butter
1 cup soft brown sugar
3 eggs
2 cups self-raising flour
125 g unsalted butter
1 cup brown sugar
 
1 teaspoon vanilla essence
3/4 cup cream

Instructions
Preheat the oven to 180°C. Line a 23 cm cake tin with baking paper. Put the dates and water into a saucepan. Bring slowly to the boil and then stir in the baking soda. Set aside to cool slightly. Cream the butter and sugar together until light and fluffy. Beat in eggs, one at a time. add date mixture. Sift flour into the mixture and fold through. (The mixture will have the consistency of batter.) Pour into prepared cake tin and cook for 30-40 minutes or until a skewer inserted into the centre of the cake comes out clean.
Combine the butter, brown sugar, vanilla and cream in a small saucepan. Allow to simmer for 5 minutes before serving with Sticky Date Pudding. Makes a good cup.
Serving Suggestions
Serve with sliced banana and whipped cream or yoghurt.
