     White Chocolate Mud Cake with Rasperry Sauce

Ingredients
250 g butter
1 cup sugar
250 g white chocolate
200 ml water
2 eggs
1/2 cup sour cream
1/2 teaspoon vanilla essence
2 1/2- 3 cups flour
1 1/2 teaspoons baking powder
 
icing sugar for dusting
250 g rasperries
juice of 1 lemon
1/2 cup icing sugar

Instructions
Preheat the oven to 180°C. line a 21 cm cake tin with baking paper. put butter, sugar, white chocolate and water into a saucepan and gently melt. Mix eggs, sour cream and vanilla together. Stir into the melted butter mix. Sift in the flour and baking powder and mix well. Pour mixture into tin and bake for about an hour or until a skewer comes out clean. Serve warm, sprinkled with icing sugar and Rasperry Sauce.
Blenhd rasperries, lemon juice and icing sugar in a food processor until shiny. press through a sieve to extract rasperry seeds. Taste for sweetness and add more sugar, if necessary. Makes 1 cup.
Serving Suggestions
Serve with whipped cream and rasperries, if it's the season.
