     Angus Beef Salad

Ingredients
1 teaspoon chilli paste or 1 red chilli, seeds removed and finely chopped
1 teaspoon grated fresh ginger
1 clove garlic, crushed
1/3 cup fish sauce
juice of 2 limes
1 1/2 tablespoons brown sugar
2 tablespoons chopped coriander
600-750 g eye fillet or sirloin beef
 
4 cloves garlic, crushed
4 teaspoons sugar
8 teaspoons soy sauce
8 teaspoons lemon juice
8 teaspoons fish suace
4 spring onions, finely sliced
1-2 red chillies, seeds removed and finely chopped
5 teaspoons chopped mint, parsley and coriander each

Instructions
Combine ingredients from chilli paste to coriander in a small bowl. Cut beef into thin strips and place in a shallow ceramic or glass dish. Pour over the marinade, tossing well. Leave to marinate for one hour.
Combine all ingredients from garlic to coriander in a screw-top jar and shake well, or in a bowl and whisk. Place in a small bowl for serving. Makes 1/2 cup.
