     Applesauce Cookies

Servings   40-41 cookies
Ingredients
2 1/4 C sugar
1 1/3 C shortening (I used unsalted butter)
3 eggs
2 tsp vanilla
1 C applesauce
6 cups sifted flour
1 tsp baking soda
2 tsp baking soda (is what is written on recipe)
1 tsp nutmeg
 
1 tsp salt
Instructions
Cream shortening, sugar, eggs and vanilla. Add applesauce and mix well.
Add dry ingredients and blend well.
Drop by heating tablespoons on greased cookie sheet. Flatten. Sprinkle lightly with sugar
Bake 10-12 minutes at 375 degrees (do NOT brown).
