     Pumpkin Cake Roll

For the Cake-
3 eggs
1 cup sugar
2/3 cup pumpkin (can use more if like strong flavor)
1 tsp. lemon juice
3/4 cup flour
2 tsp. cinnamon
1 tsp. baking powder
1 tsp. ginger
1/2 tsp. salt
1/2 tsp. nutmeg
1 cup chopped walnuts
For Filling or Frosting-
1 cup powdered sugar 1/4 cup margarine
6 or 8 oz. cream cheese 1/2 tsp. vanilla

Beat eggs with mixer 5 minutes. Add 1 cup sugar, pumpkin, and lemon juice. Fold in dry ingredients. Spread cake batter onto wax paper lined jelly roll pan or deep panned cookie sheet. and sprinkle with the nuts. Bake 15 minutes at 375 degrees. Immediately invert onto clean towel or waxed paper which is sprinkled with powdered sugar. Carefully peel off the waxed paper baked on cake. Roll up cake and towel together and cool completely. Mix all four filling/frosting ingredients together. Unroll cake roll, frost center of cake and reroll cake roll without the towel. Chill. Cut into 1 inch slices and serve alone or with whipped topping or cool whip on top.
