Combine 2 chopped tomatoes, 1 chopped cucumber, 1 chopped Italian frying pepper, 1/4 c. finely chopped red onion and 1/2 c. chopped parsley in a bowl. Toss with 3 T. olive oil, 1 1/2 T. lemon juice, 3/4 t. kosher salt, and pepper to taste. Let stand 10 minutes before serving.
