Brown steak and onion in olive oil until onion is tender. Drain excess oil. Add 1 and 1/2 cup water, brown sugar, soy sauce and ginger. Heat to boiling, then reduce heat, cover and simmer 1 hour or until meat is tender. If mixture boils down add another round of above mixture. Blend cornstarch and 1/4 cup of cold water. Stir into meat mixture. Boil and stir 1 minute. Add vegetables, cover and cook over low heat about 7 minutes stirring occasionally until vegetables are tender.
Serve over cooked rice.
For variation try leaving out the water chestnuts and sprinkle cashews or peanuts before serving.
