Ingredients
4 med to thick pork chops
1 pkg frozen chopped spinach
2 Tbls olive oil
2 cloves of garlic finelly chopped
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried italian seasoning
1/4 lb provolone cheese cut into small dice
or 1/2 cup Italian style cheeses shredded
 
1 egg lightly beaten
1 can of cream of mushroom soup

Instructions
Defrost spinach and squeeze dry. Heat 1 tablespoon oil in large saucepan over medium heat. Add garlic; cook,stirring occasionally, 1 minute. Add spinach, salt, pepper and Italian seasoning;stir and cook about 2 minutes. Remove the spinach mixture to a medium sized bowl; let cool completely. When cool add the cheese and egg; gently stir to combine. With pork chps on a flat work surface; cut a slit horizontally to the bone so chop can be opened like a book. Stuff each chop with 1/4 of the stuffing. Preheat oven to 375 degrees. Spray baking dish with Pam Heat remaining 1 tblspoon oil in a skillet. Add chops; cook 2 min. per side or until browned. Place chops in a single layer in a baking dish just large enough to hold them. Frost chops with can of cream of mushroom soup. cover with foil of casserole cover and place in oven to bake 40 minutes or until instant read thermometer registers 155 degrees. Let sit 5 minutes before serving
