     Chicken Pot Pie / Noodle Soup

Ingredients
2 lg or 3 sm chicken breasts
2 c carrots sliced or chopped
2 c celery sliced or chopped
1 c onion sliced or chopped
6 c water
2 chicken boullion cubes
salt, pepper, parsley
rosemary (optional)
Noodles- pot pie or soup
 
Additional Ingredients for Pot Pie-
2 or 3 potatoes cubed
1 Tbl cornstarch

Instructions
Add chicken, carrots, celery, onion, water, boullion and spices to large stock pot. Bring to boil, cover and simmer 1 hour. Remove chicken, cool, cut into pieces and return to pot.
For Pot Pie- Add cubed potatoes to pot. Disolve cornstarch in 1 c water. When potatoes are soft, bring to boil and add cornstarch water to thicken. Reduce heat and add cooked noodles.
For Noodle Soup- Cook soup noodles and add to pot.
Omit noodles and add dumplings for meal alternative. See dumpling recipe.
