     Carrot Cake w/Frosting

Ingredients
3 c flour
2 c sugar
2 tsp cinnamon
2 tsp baking powder
1 tsp baking soda
1 tsp salt
4 lg eggs
1 1/4 c oil
1 tsp vanilla
 
2 c shredded carrots
3/4 c chunky applesauce
1 c chopped walnuts
1 1/3 c coconut
Frosting-
3 oz pkg cream cheese
1 Tbl lemon juice
1-1/2 c confectioners sugar

Instructions
Mix flour, sugar, cinnamon, baking powder, baking soda and salt. Wisk eggs eggs and oil then add vanilla, carrots, applesauce, walnuts and coconut to dry ingredients.
Grease and flour bundt pan. Bake 1 hour at 350 degrees.
Frosting- blend cream cheese and lemon juice; slowly add confectioners sugar and beat until smooth. Spread over cake and let drip down sides.
