     Gold Rush Casserole

Ingredients
1 (5 ounce) box dry hash brown potato mix
1/4 cup (1/2 stick) butter
1/4 cup flour
2 cups milk
1 (8 ounce) carton sour cream
8 slices Canadian bacon
8 eggs
 

Instructions
Preheat oven to 300 degrees. Prepare potatoes according to package directions. In skillet, melt butter and blend in flour and 1/2 teaspoon salt and stir constantly. Gradually stir in milk. Cook, stirring constantly until thick and remove from heat. Add sour cream and hash browns; mix well. Spoon into sprayed 9 x 13 inch baking dish. Arrange bacon on top. Bake for 20 minutes. Make depressions with spoon and add 1 egg in each depression. Bake for 15 additional minutes or until eggs set.
